Ingredients: 125 g tahini, well stirred; 60 g maple syrup; 1 large egg; 1 tsp vanilla extract; 75 g almond flour; ½ tsp baking soda; ¼ tsp fine salt; 60 g 85% dark chocolate, chopped; flaky salt and sesame seeds, to finish

Method

Heat the ovenHeat the oven to 350°F (175°C). Line a sheet pan with parchment.
Mix the wetWhisk the tahini, maple, egg and vanilla until smooth and glossy.
Add the dryStir in the almond flour, baking soda and salt until no dry streaks remain. Fold in the chocolate.
ShapeScoop into 10 balls (about 35 g each), set them 5 cm apart, and press each to about 1.5 cm thick. They barely spread.
TopSprinkle with flaky salt and sesame seeds.
BakeBake 9 to 10 minutes, until the edges are set and the centers still look slightly soft.
CoolCool 5 minutes on the pan, then 5 minutes on a rack. They firm up as they cool.
