Method

Freeze aheadTrim, halve and lay the figs cut side up on parchment, single layer, unwashed or patted fully dry. Spread the cottage cheese thin on a second parchment-lined pan (about 90 minutes) or freeze in cubes (3 to 4 hours). Freeze until hard, then break the cottage cheese into shards.
Wet ingredients firstPut the milk, tahini, cacao, vanilla and salt in the container first.
Frozen on topAdd the cottage cheese, figs and banana on top. Lid on, tamper in.
BlendStart on Variable 1, ramp to 10 over about 5 seconds, and tamper hard toward the corners the whole time, about 45 seconds. It looks too dry for the first 20 seconds; keep tampering. Stop when four mounds form. Past 60 seconds friction heat turns it into a milkshake.
